This vanilla collection is made from Tahitensis vanilla beans grown in Indonesia. This is a cross between the Mexican planifolia and an ornamental orchid that was developed in French Polynesia at the beginning of the last century. Although vanilla beans from the original Tahitian terroir have a distinct flavor, those grown elsewhere in the world all have, like the original, characteristic aniseed notes.
Vanilla beans from the Tangerang region of Indonesia have a unique exotic personality: their notes of Eucalyptus punctuated by red fruits make them highly sought-after for iced desserts and tartars.
The pods we use come from the Indah Arnaelis plantation.
