Madagascar is the most important vanilla producing country in the world. It alone produces more than 80% of the world's vanilla, and rightly so, as their vanilla is unavoidable. Although the beginnings of commercial production came from the small neighbouring island of Reunion, formerly known as Bourbon, Madagascar quickly became the central pole of vanilla in the world, surpassing even Mexico, the country of origin of this wonderful spice.
