Madagascar is the world's largest producer of vanilla. It alone accounts for over 80% of the world's vanilla production, and rightly so, for their vanilla is a must-have. Although the beginnings of commercial production came from the small neighboring island of Reunion, formerly known as Bourbon, Madagascar has rapidly become the world's vanilla hub, surpassing even Mexico, the country of origin of this marvelous spice.
