  • 1 tbsp coconut oil
  • 1/4 teaspoon honey
  • 4 portions of haddock fillet
  • juice of 1/2 lemon
  • 1/4 cup dry white wine
  • A tahiti-style vanilla pod
  • Salt and pepper

1) Melt coconut oil and honey

2) Place the haddock fillets in the pan and brown on each side

3) Deglaze with lemon juice and white wine

4) Split the pod in half and scrape the caviar inside the pod. Mix the caviar with the lemon wine and leave to infuse. It is also good to leave the empty pod in the meat juice to continue to extract the flavor from the pod. Place a lid on it and keep warm until ready to serve.
