Indah's vanilla

Indah Arnaelis is a young vanilla farmer from Indonesia. She is the daughter of farmers and has studied international trade. She works her vanilla with care and offers us a very rare quality in this country which has no culinary tradition with vanilla.

Her beans are fat and well prepared and the flavor of her vanilla is rich and typical. Like many vanilla producers in Indonesia, it produces the two main types of vanilla grown in the world: the planifolia, known worldwide as JAVA because of its distinctive flavour (spicy, musky, with notes of black liquorice and raisins); and the Tahitensis, which offers us, like all the other tahitensis in the world, its aniseed and candied fruit notes, but with a character specific to its terroir: we can also distinguish notes of eucalytus and licorice.
