Vanilla pompona, also known as "vanillon", is a totally different type of vanilla from the vast majority of vanillas, almost all of which come from planifolia. Much shorter and wider, its "gorilla-leather" appearance is the result of Mexican-style preparation. Its astonishing fragrance is reminiscent of leather, sarsaparilla, wintergreen, mint and licorice. It is sought after by adventurous gourmets for BBQ marinades, spicy desserts, bold sorbets and drinks. It can be eaten whole, in thin strips, lightly simmered in oil, crushed and macerated in gin... This vanilla is an invitation to pure gastronomic invention.
Pompona gorilla skin is not cultivated. It is picked at our request by indigenous gatherers in the Papantla region of Mexico. It grows wild everywhere between Mexico and Brazil, but this one is Mexican.
The weight and size of each vanilla is so variable that it's hard to estimate the number of pods in a 25g bouquet, but we'll try to fit 3 to 7 pods.
