The organic and gluten free flours are made by Carlos Zumbado, a farmer from Upala, Costa Rica who I am particularly fond of and who calls me Muchacha. His flours are pure and made with great care. Cassava is a root vegetable or starchy tuber originating from South America. It is also known as yucca.

Unlike tapioca flour, which is made from a starchy liquid extracted from the cassava root, cassava flour is obtained by grating and drying the whole root. This flour is gluten-free, grain-free and nut-free.

It is very similar to white flour and can easily be used in recipes calling for all-purpose flour. It has a neutral flavor and is easy to digest. It also has fewer calories than coconut or almond flours.

Cassava flour is composed primarily of carbohydrates. Similar to tapioca flour, it also provides a resistant starch, which has various benefits for the digestive system.

Some research suggests that the resistant starch content of this type of flour may help reduce blood sugar levels and improve insulin sensitivity. It should be noted that processing the cassava root may decrease the levels of resistant starch present in the flour.
